I haven't tested usability but it stores language setting in the registry (version 2.1 build 5, on XP SP2):
HKEY_CURRENT_USER\Software\undelete360\gui

Edit: I was testing build 1, from Softpedia (they still have it)!!!

Like smaragdus noted regarding another function, the current release of Undelete-360 (v2.1.6.26) is crippleware -- please upload last full version, if you still have it...
