There's a expressly named pandoc-portable repository at https://github.com/pandoc-extras/pandoc-portable -- last updated in 2017-11-21, so apparently outdated. Being a CLI tool, the official pandoc release, once extracted, will expectably behave in a portable way. Note that in order to output to PDF, pandoc needs LaTeX (natively portable MikTeX is recommended).

Download the latest pandoc release (currently v2.1.3) from https://github.com/jgm/pandoc/releases/.

One does not need to extract the installer- since version 2.0.2 pandoc is offered as archive as well:

If you prefer not to use the msi installer, we also provide a zip file that contains pandoc’s binaries and documentation. Simply unzip this file and move the binaries to a directory of your choice.

Good post, thanks for that.

My current system is like 10% LibreOffice 85% Word, and 5% Markdown, but I expect that to change in the months and years ahead. A program that can quickly and automatically switch between formats is going to definitely open some doors.
