Blocking software writes by program?

I recently went digging for ways to block a given application from writing to the local hard drive, either for security reasons or to solve the stealth problem on some entries. I can run programs with limited rights, but that seems to block drive writes only some of the time.

Oddly, the tools I've found here are not at all straightforward:

Windows "protected folders" under randsomware protection. This lets you protect a given folder from "unfriendly" applications. I'm a little unclear on how that works and Microsoft's own docs on the topic aren't very specific.

There's the poweruser method, which works with Windows Policy Manager

Finally, there's two freeware security programs offer a slightly less involved but still far from simple.

Any recommendations out there? Maybe there's some kind of Sandboxie tweak?
