Pandoc (CLI document processor)

A few posts are required to disentangle the mess that the MMD2PDF topic has grown into over time. This is the one devoted to pandoc (https://pandoc.org/).
Download the latest pandoc release (currently v2.1.3) from https://github.com/jgm/pandoc/releases/.
There's a expressly named pandoc-portable repository at https://github.com/pandoc-extras/pandoc-portable -- last updated in 2017-11-21, so apparently outdated. Being a CLI tool, the official pandoc release, once extracted, will expectably behave in a portable way.
